my favourite veggie burgers

This is a meal that we make quite often, because it is really simple, filling, tasty and I think rather healthy!  This recipe is my own that I have adapted from one that I found online a couple of years ago.

Makes six large burgers

Ingredients

2 x 400g tins of chickpeas
1 red onion
2 cloves of garlic
salt and pepper
plain flour
some rolls of your choice (in this instance I used ciabatta)

These are the basic ingredients, but you could get really creative and add anything you like really, like herbs, spices or other vegetables.  Yesterday, I decided on some nuts and seeds (sesame seeds, chopped hazelnuts and pumpkin seeds).

Directions

Roughly chop the onion and garlic and add to a large bowl.  Add the drained chickpeas, and use a hand held food processor to blend until the mixture resembles a paste.  (Note, you can use any food processor of your choice!)  Add a pinch of salt and pepper to the mixture and any other ingredients that you want to keep whole (to add texture).  Sprinkle some plain flour on a plate or on your work surface, then mould the mixture into the shape of burgers, making sure each side is covered in flour. Place the burgers into a hot frying pan with a drop of oil in it.  Cook until each side is brown.  The burgers do remain quite sloppy, but once cooked then should be easier to pick up without falling apart!

I put my burgers in a ciabatta roll layers between lettuce leaves, houmous and home made salsa.  Steve made the salsa yesterday - tomatoes, orange pepper, basil, garlic and olive oil, but sometimes we add chilli instead of basil for more of a kick.

These are seriously so easy to make, and really yummy.  I have made them for some carnivore friends before and they have gone down a storm!  I would love to hear from you if you try these our yourself :)

  3. I'm not a veggie/vegan, though I quite often choose to eat the veggie options from menus etc. So I'll defo be trying these delicious-sounding burgers soon! Thanks for sharing ;o)
